Ingredients: Makes 12 servings
1 cup Flour
1/8 tsp Salt
1/2 tsp Backing Soda
6 TBSP Baking Cocoa
1/2 cup Water, boiling
1 cup Sugar
3 Eggs, lightly beaten
2/3 cup Extra Virgin Olive Oil
4 tsp Vanilla Extract
1 TBSP Powdered Sugar
Directions:
- Preheat oven to 325° F
- In a bowl, mix the flour, salt, and baking soda.
- In a separate bowl, whisk the cocoa powder and boiling water until the cocoa powder dissolves.
- In a third and largest bowl, whisk together the sugar, eggs, olive oil, and vanilla for approximately 3 minutes until the mixture is creamy.
- Stir the flour mixture and chocolate mixture from the other bowls into the now creamed eggs/sugar mixture.Mix until just combined.
- Line a 9’ cake pan with parchment paper (or spray with non-stick spray), then pour the batter into the pan.
- Bake for 35 minutes on the center rack.
- Allow cake to cool, then unmold from pan and dust with powdered sugar. Cut into 12 equal slices, enjoy!
