Chocolate Olive Oil Cake

Ingredients: Makes 12 servings

1 cup Flour
1/8 tsp Salt
1/2 tsp Backing Soda
6 TBSP Baking Cocoa
1/2 cup Water, boiling
1 cup Sugar
3 Eggs, lightly beaten
2/3 cup Extra Virgin Olive Oil
4 tsp Vanilla Extract
1 TBSP Powdered Sugar

Directions:

  1. Preheat oven to 325° F
  2. In a bowl, mix the flour, salt, and baking soda.
  3. In a separate bowl, whisk the cocoa powder and boiling water until the cocoa powder dissolves.
  4. In a third and largest bowl, whisk together the sugar, eggs, olive oil, and vanilla for approximately 3 minutes until the mixture is creamy.
  5. Stir the flour mixture and chocolate mixture from the other bowls into the now creamed eggs/sugar mixture.Mix until just combined.
  6. Line a 9’ cake pan with parchment paper (or spray with non-stick spray), then pour the batter into the pan.
  7. Bake for 35 minutes on the center rack.
  8. Allow cake to cool, then unmold from pan and dust with powdered sugar. Cut into 12 equal slices, enjoy!
