No-Bake Cranberry Pear Tart

Dessert

Ingredients: Makes 8 servings
Crust

2 1/2 cups Walnuts or Pecans, Toasted
1 cup Medjool Dates, Pitted
1/2 tsp Cinnamon
Salt, to taste

Filling
3 Pears, thinly sliced
1/4 tsp Cinnamon and Nutmeg
1/2 cup Maple Syrup
1/4 cup 100% Apple Juice
1/4 cup Dried Cranberries

Directions:

  1. For the crust, combine the walnuts/pecans, dates, cinnamon, and salt in a food processor until mixture is combined, but not smooth.
  2. Press mixture into the bottom of a 9–inch non-stick pan.
  3. Refrigerate as you begin the filling.
  4. For the filling, place pears, cinnamon, nutmeg, maple syrup, apple juice, and cranberries in a saucepan over medium-high heat.
  5. Sautee until soft (approximately 10 minutes)
  6. Spread filling into crust.
  7. Refrigerate until ready to serve (good warm or cold!)

One eighth of 9-inch pan
