Grilled Scallion, Farro, Mint Salad

Ingredients: Makes 10 servings

Side dishes

8 ounces scallions
2 tablespoons lemon juice
1 teaspoon lemon zest
2 tablespoons canola oil
1 tablespoon white miso paste
1/2 teaspoon ground black pepper
1 pound cooked farro
1/4 cup chopped mint
1 cup edamame
1 cup matchstick carrots

Directions:

  1. Preheat grill and coat with with non-stick cooking spray. Cook scallions until charred and soft. Let cool. Remove the roots and slice into 1” pieces.
  2. Meanwhile, prepare dressing in a large bowl. Whisk together lemon juice, lemon zest, oil, miso paste, and black pepper until combined.  (Lemon-Miso Dressing)
  3. Add scallions, cooked farro, mint, edamame, and carrots and toss until evenly coated.

Serving size:
1/2 cup
