Creamy Cucumber Vinaigrette

Ingredients: Makes 20 Servings

Side dishes

2 1/4 cups diced english cucumber
1/4 cup red wine vinegar
1/4 cup chopped fresh chives
1/4 cup chopped fresh parsley
1/4 cup nonfat plain greek yogurt
1 tablespoon prepared horseradish
1 tablespoon sugar
1/2 teaspoon salt
1/2 cup canola oil

Directions:

  1. In a food processor or blender, combine cucumber, red wine vinegar, chives, parsley, yogurt, horseradish, sugar, and salt. Pulse until smooth.
  2. While blender is on, slowly stream in oil until fully combined.

Serving size:
2 Tablespoons
