Ingredients: Makes 20 Servings
2 1/4 cups diced english cucumber
1/4 cup red wine vinegar
1/4 cup chopped fresh chives
1/4 cup chopped fresh parsley
1/4 cup nonfat plain greek yogurt
1 tablespoon prepared horseradish
1 tablespoon sugar
1/2 teaspoon salt
1/2 cup canola oil
Directions:
- In a food processor or blender, combine cucumber, red wine vinegar, chives, parsley, yogurt, horseradish, sugar, and salt. Pulse until smooth.
- While blender is on, slowly stream in oil until fully combined.
