Ingredients: Makes 1 serving
2 tablespoons cooked garbanzo beans*
2 tablespoons diced english cucumbers
3/4 teaspoon extra virgin olive oil
3/4 teaspoon lemon juice
3/4 teaspoon chopped fresh dill
Pinch salt
Pinch black pepper
1/4 cup Quinoa, Seed, and Oat Granola
1/2 cup plain nonfat greek yogurt
Directions
- In a small bowl, toss together garbanzo beans, cucumbers, olive oil, lemon juice, dill, salt, and pepper.
- In a bowl or cup, layer greek yogurt, cucumber chickpea salad, and top with granola.
*NOTE: Rinsed canned chickpeas can be used to save time
