Ingredients: Makes 4 servings
1 1/2 pounds Large shrimp, peeled & deveined
1 pound Asparagus, trimmed
2 TBSP Dry white wine or broth
4 ea Garlic minced
2 tsp Lemon Zest
4 TBSP Margarine, cut into small pieces
1-2 ea Lemon, juiced
2 TBSP Fresh parsley, chopped
Salt and Black pepper to taste
Directions:
- Preheat your grill to medium-high heat or preheat your oven to 425 degrees F. Cut four sheets of 14x12-inch heavy duty aluminum foil then lay each piece separately on counter top.
- Divide shrimp among packets near the center then place asparagus to one side of the shrimp. Drizzle 1/2 TBSP white wine over the food in each foil packet, Sprinkle each with garlic and lemon zest then season with salt and pepper, to taste. Divide butter evenly between each packet, placing on top of shrimp and asparagus. Wrap packets in and fold edges together. Don't wrap too tight - keep a little extra space inside for the heat to circulate.
- Grill or back, sealed side upward, until shrimp are cooked through, about 7-10 minutes. Carefully unwrap then drizzle with lemon juice and sprinkle with parsley.
