Ingredients: Makes 4 serving
1 jalapeno
½ bunch scallions
8 ounces fresh blueberries
1/8 teaspoon salt
2 tablespoons lime juice
¾ teaspoons olive oil
¼ each red onion, finely chopped
¼ cup fresh basil, chopped
¼ cup fresh cilantro, chopped
Pinch cayenne pepper
Directions
- Preheat grill to medium-high flame. Grill jalapeno until slightly charred, turning frequently. When done, pull off stems and remove skin from peppers. Roughly chop the peppers then set aside for later use. Grill whole scallions until soft and charred, about 4 minutes, turning frequently. Remove from grill, let cool, and chop into small pieces.
- Place 2/3 of the blueberries in a food processor. Pulse until coarsely chopped then transfer to a medium bowl. Add red onion, jalapeno, lime juice, and salt. Mix well. Add basil, cilantro, remaining blueberries, and oil. Stir to combine.
