Sheet Pan Steak Fajitas

Ingredients: Makes 8 servings

Entrees

1 pound Flank Steak
1 Onion, thinly sliced
1 Red Bell Pepper, thinly sliced
1 Yellow Bell Pepper, thinly sliced
1 Green Bell Pepper, thinly sliced
1/4 cup Olive oil
2 tsp Chili Powder
1 tsp Ground Cumin
1 tsp Garlic Powder
1 tsp Paprika
Salt and Black Pepper to taste
1 Garlic, minced
8 Corn Tortillas 6-inch
Lime Wedges & Fresh Cilantro to taste

Directions:

  1. Preheat oven to 400 degrees F. Line two sheet pans with foil.
  2. Place steak, onion, and bell pepper in a large bowl. Drizzle with olive oil. In a small bowl, combine chili powder, cumin, garlic powder, paprika, salt, and pepper and then sprinkle over steak and veggies. Add garlic. Toss until evenly coated.
  3. Lay the meat and veggies onto your prepared pans in a single layer. Cook 12-20 minutes or until steak reaches desired doneness and veggies are crisp-tender. When you have about 5 minutes of cooking time left, wrap your tortillas in foil and place in the oven to warm up.
  4. Serve tortillas, steak, and veggies with lime wedges and fresh cilantro.
